I am a woman in search of a potluck.
My vegetable casserole is made with lima beans, chopped broccoli and water chestnuts. I think it must have been a “what the heck do I have on hand to put together for the potluck tonight,” kind of desperation dish, because the topping is Rice Krispies. I don’t remember who gave it to me, but how clever she was.
I love to cook and bake when I have someone to share it with, because most of my recipes are to feed four or more. In my recipe collection are scraps of paper with recipes women at potluck dinners have given me, all parked in a metal file box, covered with 1970s flowered Contact paper and a label from one of my old textbooks “used.” Indeed they are.
The dish was such a hit at my church pot luck a few months ago, I was asked to share the recipe, so I found it, all folded up and stuck down among the other recipes.
The woman I emailed it to, responded she is making it for Easter. Remembering how good it tastes, even though it sounds like a weird combination, I want an excuse to make it again.
No chance anyone in my family will eat it. My girls used to say they were giving up lima beans for Lent. Anyone having a Potluck Dinner? I have the limas!
